Total Phenolics

This method is used for determination of total phenolic compound concentration in wine using the Astoria Flow systems. The applicable range is 100 to 4000 mg/L gallic acid equivalents (GAE).

Summary

Phenolic compounds in wine and juice samples are reduced by Folin-Ciocalteu reagent and the absorbance is measured at 750 nm. The absorbance is proportional to the total phenolic concentration.

Limitations

Readily oxidized compounds (i.e. ascorbic acid, sulfur dioxide) could interfere.
